The most important thing is a tripod that allows you to measure degrees in angle. I always make sure that each image overlaps a fairly decent amount to make sure I have good quality to stitch with. Another important thing is that I absolutely ALWAYS use a prime lens. The reason for this is that it is pretty much distortion free and I lose less of the image to correcting for the barrel distortion.

I also try to avoid places that have too many lines. Sometimes it is near impossible to get things to line up properly. With infrared, I actually position the camera at the beginning frame and end frame while making note of the range on my tripod scale. I then take a test exposure to check my histogram and look at the LCD screen for the IR. Once that satisfies me, I set my camera to the position on the scale to start and then take the same exact exposure as quickly as possible. I also don't use long exposure noise reduction in the camera because it slows down the cameras ability to take the photos quickly enough before you lose light. I try to shoot my IR during the golden hours so I can get a nice cast of IR within the the scattered sunlight. Sorry for the long novel. I should have just noted you. :D

Maybe I should have mentioned that I can't just swap lenses. I have a point n' shoot camera, which luckily has no long-exposure correction AFAIK. It also has no ISO noise correction on the lower ISOs, and I generally shoot in ISO80 or 100. As for angles, I just make sure there's overlap, but it's not necessarily consistent between pictures, it's always a good amount though.

Shoot vertical. It helps with stitching to have more vertical shots.

As in portrait? Or in as have the panorama be, say, 2 pictures high by 6 wide?

Yeah, when I shoot panos I always shoot in portrait orientation. I get more resolution that way. This pano is sized at 3:1 and I barely had to crop out any dead space from the stitching. You can still do the same with a point and shoot. My deviation here was taken with a point and shoot: [link]
